Bitters are high-proof infusions of bark, root and spice, used a few dashes at a time. They are seasoning, not an ingredient, and the right comparison is salt: nobody tastes them individually in a finished drink, and a drink missing them tastes vaguely incomplete without anyone being able to say why.

Angostura is the default and covers almost everything. Peychaud's is lighter, more anise-forward and brighter red, and it is what makes a Sazerac a Sazerac. Orange bitters are the third bottle worth owning and they belong in a Martini more often than most recipes admit.

A bottle lasts years. At 40% ABV and a few dashes a drink, one will outlive most of the spirits on the shelf.
