Sweet vermouth is wine, fortified and infused with herbs and spices, usually red and usually around 16% ABV. It is not a spirit and that matters for two reasons: it is the low-alcohol half of drinks like the Manhattan and the Negroni, and it goes off.

Once opened it belongs in the fridge and is at its best for about a month. A bottle that has stood on a warm shelf since last year is oxidised and stewed, and it is the most common reason a home-made Manhattan tastes flat when the recipe was followed exactly.

Buy the small bottle. Most recipes use 15 to 30 ml and a 375 ml bottle you finish beats a litre you throw away.
