Dry vermouth is white, roughly 18% ABV and considerably less sweet than its red counterpart, with a herbal, faintly saline edge. It is what makes a Martini a cocktail rather than cold gin, and the long fashion for using less and less of it has mostly produced worse Martinis.
Like all vermouth it is wine and it oxidises. Refrigerate it after opening and expect a month of good drinking. If your Martini tastes dusty, the vermouth is almost always the cause.
It has a second life outside cocktails entirely, which is the easiest way to justify finishing a bottle: cold, over ice, with a twist, is a genuinely good low-alcohol drink.
