Amaretto tastes of almond and marzipan, though most of it is made from apricot kernels rather than nuts. It is sweet, around 25% ABV, and it is best understood as a flavoured sweetener rather than a spirit.

That is the key to using it: if you put amaretto into a recipe, take the syrup out. The classics that work are the ones where it replaces the sugar entirely, like an Amaretto Sour, where lemon does the balancing.

It also has a long history as a float or a modifier in small measures, in a Godfather or a French Connection, where 15 ml is enough to change a whole drink.
