Whiskey cocktails split along one line: how much sweetness the spirit brings before you add any. Bourbon is corn-led, round and faintly sweet, so it softens a drink. Rye is drier and peppery and sharpens one. That is the whole argument in a Manhattan, and it is why the same recipe made with each tastes like two drinks.
Scotch is a different proposition again, because peat does not blend quietly. A Penicillin is built to use it; most classics are not, and a smoky Scotch in a recipe written for bourbon will dominate everything else in the glass.
Almost every whiskey classic is one of three shapes: spirit, sugar and bitters (the Old Fashioned), spirit and fortified wine (the Manhattan), or spirit, citrus and sweetener (the Whiskey Sour). Learn those three and the rest are variations.
