Campari is a bitter aperitivo: red, intensely so, and built on bitter orange and herbs at around 25% ABV. It is the ingredient that makes a drink taste like an apéritif rather than a dessert, and it is deliberately more bitter than most people expect on first taste.

The great Campari drinks are all built on the same trick, which is putting it in equal measure against something sweet and something strong. A Negroni is gin, Campari and sweet vermouth in thirds. Swap the gin for bourbon and it is a Boulevardier; swap it for sparkling wine and it is an Americano's cousin.

Nothing substitutes cleanly. Aperol is roughly half the strength and considerably sweeter, so an Aperol Negroni is a different and much gentler drink rather than the same one.
