Gin and Campari is the bitter end of the cocktail world and the Negroni is its flagship: equal parts gin, Campari and sweet vermouth, stirred, over ice, with an orange peel. Three ingredients in equal measure, which is why it is the easiest classic to make from memory.
The equal-parts build is also an invitation to adjust. More gin makes it drier and more aromatic, more vermouth makes it rounder, and stretching it with soda turns it into something you can drink in the afternoon.
If the bitterness is too much, the answer is not less Campari but more dilution. Stir it longer and taste again before rebalancing.
