Whiskey and sweet vermouth is the Manhattan, and the Manhattan is the template for more cocktails than any other stirred drink. Two parts whiskey to one part vermouth, two dashes of bitters, stirred, cherry.
Change the whiskey and you change the drink's name. Scotch makes a Rob Roy, Canadian makes a Toronto's neighbour, and adding Campari in place of the bitters gives you a Boulevardier. Equal parts of both vermouths makes it Perfect.
This is where old vermouth does the most damage. In a drink that is a third fortified wine, a bottle that has been open for six months is the whole problem.
