Remember the Maine

Rye, sweet vermouth and maraschino stirred together in a coupe that has been rinsed with absinthe and the excess discarded. The absinthe never shows up as a flavour so much as a cold anise smell that hits before the first sip. Underneath it is essentially a Manhattan with a cherry-almond lift. Charles H. Baker recorded it in Havana in 1933, mid-revolution, and the drink has kept his sense of drama.

Ingredients

  • 60 ml Rye Whiskey
  • 22.5 ml Sweet Vermouth
  • 15 ml Luxardo® Maraschino Liqueur
  • 7.5 ml Absinthe

Instructions

  1. Pour the absinthe into a coupe glass and swirl to completely coat the inside. Discard the absinthe and set the glass aside. Add the other ingredients to a mixing glass and fill it 3/4 full with ice. Stir until chilled, then strain into the glass rinsed with the absinthe.
