An aperitif is meant to sharpen the appetite rather than satisfy it, which is why the category runs bitter and dry and why the drinks in it are usually low in alcohol and served before a meal rather than after.
Bitter aperitivo liqueurs do most of the work: Campari and its relatives, plus dry vermouth and sherry. A Negroni, an Americano and a Spritz are all the same idea at three different strengths.
Serve them cold and serve them small, or long over plenty of ice. An aperitif that takes an hour to drink has stopped being one.
