Old Cuban

A Mojito that grew up: aged rum, lime, mint and Angostura shaken together, then lengthened with Champagne instead of soda. The bitters and the aged rum give it a depth the Mojito never has, and the Champagne makes it elegant rather than refreshing. Served up in a coupe under a mint sprig. Audrey Saunders created it at Pegu Club and it still feels like a special occasion.

Ingredients

  • Mint Leaves
  • 45 ml Aged Rum
  • 22.5 ml Lime Juice
  • 30 ml Simple Syrup
  • 2 dashes Angostura® Bitters
  • 60 ml Champagne

Instructions

  1. Pour all ingredients into cocktail shaker except the wine, shake well with ice, strain into chilled elegant cocktail glass. Top up with the sparkling wine.
