Ponche de Pina

A warm, aromatic punch of sweet pineapple and coconut with a soft layer of baking-spice notes from cinnamon, cloves and allspice. It pours a golden, slightly creamy hue and tastes tropical and comforting with a clear rum warmth, ideal for sipping by the pitcher on cool evenings or at a festive gathering.

Ingredients

  • 3 Pineapple
  • 3 cups Water
  • 3 Cinnamon Stick
  • 2 tsp Whole Cloves
  • 2 tsp Whole Allspice
  • 0.75 cup Granulated Sugar
  • 1 cup Coconut Milk
  • 1 qt Light Rum

Instructions

  1. Peel and chop or shred the pineapples.
  2. Combine the pineapple pieces with water and let the mixture stand overnight to soak.
  3. In a large saucepan, mix the soaked pineapple with cinnamon sticks, whole cloves, whole allspice, sugar, and coconut milk.
  4. Bring the mixture to a boil and let it boil for about 5 minutes to ensure flavors are infused.
  5. Carefully strain the liquid into a large pitcher to remove the solid spices and pineapple pieces.
  6. Add the light rum to the strained liquid and stir well.
  7. Serve the ponche de pina hot, ensuring each serving is well mixed.
