Jamaican Rum-Ginger Zinger

A bright, spicy rum cocktail built around house-made ginger beer. Expect a sharp ginger heat balanced by zesty lime and the deep molasses notes of dark rum and falernum. It pours a warm amber-gold over ice with a fizzy, effervescent mouthfeel and a curled lime peel on the rim. Worth making for its bold, refreshing contrast of sweet, spicy and citrus flavors and its batch-friendly presentation for parties.

Ingredients

  • 2 cups Water
  • 2 oz Ginger
  • 0.75 cups Lime Juice
  • 1 tbsp Golden Brown Sugar
  • 1.5 cups Dark Rum
  • 0.75 cups Simple Syrup
  • 0.25 cups Falernum

Instructions

  1. Start by bringing water to a boil in a medium saucepan. Remove from heat once boiling.
  2. Add the freshly grated ginger and a small amount of lime juice to the hot water. Cover the saucepan and let it stand for an hour.
  3. Add brown sugar to the mixture and stir until fully dissolved. Strain the mixture into a bowl, pressing firmly on the ginger solids to extract as much liquid as possible.
  4. Allow the ginger beer to cool completely and transfer it to a jar. Cover and chill the mixture for at least two hours or up to one week in the fridge.
  5. In a pitcher, combine dark rum, simple syrup, falernum syrup, the prepared ginger beer, and the remaining lime juice.
  6. Prepare Hurricane glasses by filling them with ice. Pour the mixed drink over the ice in each glass.
  7. For an optional touch, garnish the rim of each glass with a curl of lime peel before serving.
