Rum Rickey

A crisp, citrus-forward highball that balances bright fresh lime and light rum with a hint of sugar and lively club soda. It looks pale and effervescent in a tall Collins glass with a lime wedge, making it an easy, refreshing choice for warm weather or casual sipping. Worth making for its simplicity and quenching, low-effort fizz.

Ingredients

  • 1.5 oz Light Rum
  • 0.5 oz Lime Juice
  • 1 tsp Sugar Syrup
  • Fill Soda Water

Instructions

  1. Chill your Collins glass by filling it with ice cubes.
  2. In a separate mixing glass, also filled with ice, combine the light rum, lime juice, and sugar syrup.
  3. Secure the mixing glass lid or shaker tin and give it a vigorous shake for about 10 seconds, ensuring everything is well mixed and chilled.
  4. Empty the ice from the Collins glass and strain the shaken mixture into the glass, which should be filled with fresh ice cubes.
  5. Top the drink with club soda, allowing it to fill the rest of the glass.
  6. Garnish the beverage with a wedge of lime on the rim of the glass for an added citrus aroma.
