Sima

A traditional Finnish low-alcohol lemonade: sweet and lemon-forward with a mild tang and gentle natural carbonation. Pale, slightly cloudy gold with floating raisins, an easy, crowd-pleasing, mildly fizzy refresher worth making for picnics or celebrations.

Ingredients

  • 5 L Water
  • 1.5 dl Granulated Sugar
  • 1.5 dl Brown Sugar
  • 1.5 dl Beer
  • 1 Lemon
  • 2 tsp Active Yeast

Instructions

  1. Boil the water, sugars, and beer along with the yellow peel of the lemon until everything is dissolved.
  2. Allow the mixture to cool down to room temperature.
  3. Carefully peel off the white layer of the lemon's peel and chop the fruit into small pieces. Add these to the mixture.
  4. Mix a small amount of the cooled mixture with yeast until dissolved, then combine it back into the large batch.
  5. Add 5-6 raisins and 1 tablespoon of sugar to each bottle.
  6. Pour the mixture into bottles and seal them tightly.
  7. Store the bottles in a cool place and allow them to ferment for a few days.
  8. The drink is ready to serve once the raisins rise to the top of the bottle. Keep it refrigerated to maintain freshness for 1-2 weeks.
