Coquito

Velvety, sweet and coconut-forward with warm cinnamon and a rounded vanilla-milk richness from the evaporated/condensed milk and egg yolks; the rum gives a warming boozy backbone. It pours thick and creamy, pale ivory speckled with cinnamon, and works wonderfully as a festive dessert-style sipper or party batch drink. Worth trying if you like rich, tropical creamy cocktails and seasonal holiday flavors.

Ingredients

  • 0.5 L Water
  • 15 oz Coconut Cream
  • 12 oz Evaporated Milk
  • 14 oz Condensed Milk
  • 4 Egg Yolk
  • 2 stick Cinnamon
  • 1000 mL White Rum

Instructions

  1. Boil the cinnamon sticks in water until the water becomes yellow and fragrant with cinnamon.
  2. Remove the cinnamon sticks from the water.
  3. On low heat, add the evaporated milk, condensed milk, and egg yolks to the cinnamon water.
  4. Stir continuously to prevent the mixture from sticking to the bottom of the pot.
  5. Allow the mixture to boil gently for a few minutes.
  6. Add the cream of coconut and white rum to the mixture.
  7. Stir well to combine all ingredients thoroughly.
  8. Remove from heat and let the mixture cool before serving.
  9. Store the coquito in the refrigerator to keep it fresh.
