Lemouroudji

A bright, tart lemonade lifted by sharp fresh ginger and a slow-building cayenne heat; pale, slightly cloudy and best served well chilled. The sugar smooths the acidity while the grated ginger gives a lively, fibrous warmth and a spicy finish that makes it memorable. Ideal as a refreshing, batch-friendly non-alcoholic drink when you want citrus brightness with a little bite.

Ingredients

  • 2 pieces Ginger
  • 1 gal Water
  • 1 lb Lemon
  • 1 cup Granulated Sugar
  • 1 dash Ground Cayenne Pepper

Instructions

  1. Juice the lemons into a container, ensuring no seeds remain.
  2. Peel the ginger and grate it finely.
  3. Place the grated ginger and a liberal dash of cayenne pepper into a piece of cheesecloth, securing it tightly in a knot.
  4. Submerge the cheesecloth bundle into the gallon of water and let it infuse for about 15 minutes.
  5. Remove the cheesecloth bundle, then add the sugar and freshly squeezed lemon juice to the infused water.
  6. Stir the mixture thoroughly until the sugar is completely dissolved.
  7. Chill the drink for some time in the refrigerator before serving.
