Fish House Punch

Bright, lemony sourness is balanced against a rich, warming backbone of dark rum and brandy with a light peachy aroma; the sweetness tempers the bite making it surprisingly smooth for its strength. It pours amber-brown in a large punch bowl and is best served over plenty of ice for a communal, festive presentation. A must-try if you want a potent, crowd-pleasing, historic punch that scales easily for gatherings.

Ingredients

  • 36 oz Dark Rum
  • 24 oz Lemon Juice
  • 25 oz Brandy
  • 4 oz Peach Brandy
  • 0.75 lb Caster Sugar
  • 40 oz Water

Instructions

  1. Dissolve the superfine sugar in a portion of the water until fully integrated.
  2. Combine the lemon juice and the remaining water, stirring until mixed thoroughly.
  3. Pour in the dark rum, brandy, and peach brandy, stirring to combine.
  4. Refrigerate the punch for 2 to 3 hours to allow the flavors to meld.
  5. Serve the punch in a large punch bowl over ice, garnishing if desired.
