Pisco Punch

The drink that made San Francisco's Bank Exchange famous in the 1800s, and whose original recipe its owner took to the grave. This version mashes whole cloves into simple syrup, shakes that with pisco, pineapple and lemon, then floats dry white wine on top. It drinks bright and grapey with a warm spice underneath and a light, wine-lifted finish. Dangerously easy for its strength.

Ingredients

  • 60 ml Pisco
  • 22.5 ml Pineapple Juice
  • 15 ml Simple Syrup
  • 15 ml Lemon Juice
  • 30 ml Dry White Wine
  • 3 Whole Cloves

Instructions

  1. Gentle mash the simple syrup with the cloves, add the remaining ingredients except the wine. Shake vigorously and double strain into a large goblet. Add the wine on top and gently stir.
